What’s New on the Farm!
Egg-citing News!!
The “buffs,” as we endearingly refer to our Buff Orpington hens, should begin laying eggs any time!!
How do we know? Other than their age, which is a good indicator, many of their combs are getting larger and redder! This is another indication that these blonde babes will begin egg production soon!
What does this mean for you? More eggs to go around!! If you are one of our regular customers, you’re well aware that you have to “get up with the chickens” to get to the market in time to buy eggs, because they “fly the coop” fast!! So, we are very egg-cited to have eggs-tra EGGS, so maybe you can sleep in a little longer!
Regenerative Farming Benefits Us All!
As we’ve discussed in the past, our regenerative farming practices improve the microbes in the soil, bringing it back to a more fertile and natural state, which makes the grass healthier, thus making the animals healthier, and in turn making us healthier!! Win-Win-Win!! And there’s nothing we enjoy more than seeing the land blossom with life all around us! But wait; there’s more! Our regenerative farming methods also encourage a healthy population of natural pollinators, such as bees, butterflies, beetles, and hummingbirds! This leads to improved biodiversity of the wild species present which all leads back to healthier soil, healthier animals, and healthier people!! It all starts with the soil!

Healthy, Happy Holiday Planning
As the holidays swiftly approach and we begin to make plans with friends and family, consider taking a healthy approach to the holidays this year by slowing down, considering what really matters, and making the holidays truly memorable! Focusing on being thankful to God and savoring delicious meals with those we love is a great place to start. And great meals don’t have to be unhealthy meals! This year, make an effort to incorporate more wholesome vegetables, fruits, and pasture-raised meats into your meals. We’ll happily provide the eggs and pork at the farmers markets, and our market neighbors will be happy to supply your veggies, fruits, breads, and all the trimmings. Fresh, local food is something to be celebrated, and sharing it with those you love is a real thing of beauty!
Pork Tenderloin Recipe
Pork Tenderloin (1-2 lbs.)
1 ½ Tbsp. oil
2-3 Tbsp. fresh lemon, lime or orange juice
2 tsp. Italian seasoning
1 tsp. garlic powder
1 tsp. cumin
1 tsp. salt
1 tsp. chili powder
½ tsp. smoked paprika
½ tsp. black pepper
Directions:
1. Preheat oven to 400 degrees and lightly grease a large casserole dish. Pierce tenderloin with a fork all over. Rub oil onto all sides of the meat.
2. Mix together Italian seasoning, garlic powder, cumin, salt chili powder, smoked paprika, and black pepper. Sprinkle mixture on tenderloin, patting it onto the meat on all sides. Place in prepared baking dish and drizzle lemon/lime/orange juice over the top.
3. Bake for 25-35 minutes until outside is browned and slightly crispy and center is cooked to desired preference.
4. Spoon juices over the meat. Allow to rest about 5 minutes. Slice into 1-inch pieces and enjoy!
