Hello Friends!

What’s New on the Farm!

It’s August, and the heat is definitely on! The nice thing about East Tennessee is we know the Fall season will come with its cool temperatures, colorful leaves, and captivating sunrises…and it can’t come too soon for us! But, despite the heat and drought challenges, we’re thrilled to be increasing our herd of cattle, our pigs, and of course, our chickens!! The farmer’s market is in full swing and demand for pork and eggs has been high, which is a true blessing for us! We are so grateful to all our loyal customers!! And if we happen to be out of a pork cut you love, don’t worry, you’ll be “bringin’ home the bacon” very soon, because we’ll have all your favorites back in stock in mid-August!!

Nourish Knoxville Restaurant Week!

And speaking of bacon, we are very excited (and thankful) that Camp Honey Coffee on Lyons View Pike in Knoxville is featuring our yummy, pasture-raised bacon on their specially-crafted BLT’s during Nourish Knoxville’s Restaurant Week, Monday, August 4 – Sunday, August 10!! Make sure you stop by Camp Honey Coffee and “pig out” on a BLT featuring OUR bacon! You’ll think you died and went to “hog heaven!”

Also, be sure to check out some (or all) the other participating restaurants celebrating our local food scene here in Knoxville during Restaurant Week! All will be featuring a specially-crafted menu item that highlights locally-sourced ingredients from farmers in the area, and a percentage of the proceeds from the items will be donated to Nourish Knoxville!! It’s a big win-win for everyone… from wonderful Nourish Knoxville Farmer’s Market, the farmers in the area, to you!!

 

Everything’s Coming Up “Rosies!”

We know we debuted Rosie in our last newsletter, but if you’re like us, you can’t get enough of this bovine babe!! She is growing fast and can be a little feisty, but we wouldn’t want her any other way!

She loves her mama, and she apparently thinks the “grass is greener on the other side of the fence,” because we found her over there and had to make some adjustments to the fence. We see you, Rosie!!

Blonde Chicks!

They sure grow up fast, as the saying goes! Those baby chicks we introduced in our last newsletter are now teenagers! Before you know it, our Buff Orpingtons will be laying eggs!! But, hey, we can always use some more of THOSE, so that’s a very good thing! Our pasture-raised eggs from our happy hens are “eggs-tra” healthy and “eggs-tra” delicious, so we’re excited about having more for our “eggs-tra” special customers!!

Countdown to Cool!!

Here’s a recipe to get you in a Fall frame of mind using ingredients you can get now! This one will shine with our breakfast sausage or Italian sausage and our eggs!! And the really cool thing about this recipe is you can find most ALL the ingredients at the farmers’ market!!

Sausage-Stuffed Acorn Squash

Ingredients

2 acorn squash, halved and seeded

1 pound ground sausage

1 cup chopped celery

½ cup chopped mushrooms

¼ cup chopped onion

1 large egg, beaten

½ cup sour cream

½ cup grated Parmesan cheese

½ cup mozzarella cheese (optional)

Directions

1) Preheat oven to 375 degrees. Line a baking sheet with aluminum foil.

2) Place squash halves, cut-side down, onto the baking sheet. Bake until tender, about 1 hour. Remove from oven, turn squash over and set aside to cool.

3) Heat a large skillet over medium heat. Cook sausage until brown and crumbly (about 5-7 min.) Drain grease and add celery, mushrooms, and onion. Cook and stir until celery is softened (5-10 min.) Remove from heat.

4) Beat egg in a large bowl; stir in sour cream and Parmesan cheese. Stir into sausage mixture, then spoon into squash halves. Sprinkle with mozzarella cheese (if using).

5) Place squash in oven and bake until filling is cooked (about 20 minutes).

Market Square in downtown Knoxville on Saturdays from 9 a.m. to 1 p.m.

Jackson Square in Oak Ridge on Saturdays from 8 a.m. to 12 p.m.
