Honey Mustard Pork Chops
YOU WILL NEED
• 4 bone-in or boneless pork chops about 1-inch thick, ~6 oz each
• 2 tablespoons olive oil or butter
• ⅓ cup Dijon mustard
• ¼ cup honey
• 2 tablespoons whole grain mustard - optional, for texture
• 2 cloves garlic minced
• 1 tablespoon apple cider vinegar or lemon juice
• ½ teaspoon paprika
• Salt and black pepper to taste
DIRECTIONS
• Prepare sauce: In a small bowl, whisk together Dijon mustard, honey, whole grain mustard, garlic, vinegar, paprika, salt, and pepper until smooth. Set aside.
• Season pork: Pat pork chops dry with paper towels and season both sides lightly with salt and pepper.
• Sear chops: Heat olive oil in a large skillet over medium-high heat. Sear pork chops 3–4 minutes per side until golden brown.
• Glaze & cook through: Reduce heat to medium-low. Pour the honey mustard sauce over the pork chops. Simmer 5–7 minutes, turning once, until chops are cooked to 145°F (63°C) internal temperature and sauce thickens slightly.
• Rest & serve: Remove pork from skillet and let rest 3 minutes. Spoon sauce over the top and serve warm.
