Spring has Sprung!

After a long, cold winter, Spring has arrived, and there are lots of exciting things happening on the farm!!

We will have LOTS of fresh pork in June!

What makes our pastured eggs so special? Our chickens live the good life on tons of acreage, where they are moved every 3 days in their “egg mobiles” to greener pasture!

You can see and taste the difference in our pastured eggs! The yolk is a darker yellow than those in the store because they contain more vitamins, minerals, and omega-3s! That’s why our healthier eggs taste richer and more delicious! Farm-fresh, pastured eggs are just as God intended!

Recipe of the Month

Broccoli Frittata

12 large eggs

1/3 cup whole milk

¾ tsp. table salt, divided

1 tbsp. extra-virgin olive oil

12 oz. broccoli florets, cut into ½ inch pieces (4 cups)

Pinch red pepper flakes

3 tbsp water

½ tsp. lemon juice

4 oz. feta cheese, crumbled

1. Adjust oven rack to middle position & heat oven to 350 degrees. Whisk eggs, milk, and ½ tsp. salt in bowl.

2. Heat oil in 12-inch oven-safe nonstick skillet over medium high heat. Add broccoli, pepper flakes and remaining salt; cook, stirring frequently, about 7-9 minutes. Add water, lemon zest & juice, continue to cook, stirring constantly until broccoli is tender and no water remains in skillet, about a minute longer.

3. Add feta & egg mixture & cook, using rubber spatula to stir and scrape bottom of skillet until large curds form. Smooth curds into even layer and cook, without stirring for 30 seconds. Transfer skillet to oven and bake until slightly puffy and surface bounces back when lightly pressed, 6-9 minutes. Using rubber spatula, loosen frittata from skillet and transfer to cutting board. Let stand 5 min. before slicing.
